The signature dish here is Shio Ramen: a golden, salt-based hot noodle soup made from Hakata Jidori (locally raised chicken) and potherbs. The bowl is topped with char-grilled chicken. You can even order a kaedama (second serving of noodles) and change the flavor of the remaining soup! Grilled gyoza dumplings and karaage (fried chicken) are also popular.
